Rick Nelsen

Owner & Chef

Rick Nelsen’s story is one of family, history, and good fortune. Rick was the grandson of Dave Wilson, owner of Dirty Dave’s Pizza, a staple in Olympia dining to this very day. Rick and his grandfather are two sides to the same coin. His grandfather was the same way back in the seventies. His personality was large as life! Dave was blinged-out, complete with gold chains, a big personality, a vibrant sense of humor, and a true pride and dedication to customer service. In reality, Rick’s eclectic style is a true reflection of his love for his grandfather. Dave taught Rick all about the business from a young age and helped inspire him to open Ricardo’s nearly 14 years ago. It was not long after, Rick met his beautiful wife, Marie. Rick and Marie run the business together and are the proud parents of their wonderful son, Royce.

Although Dave Wilson passed away a few years ago, his tradition and commitment to customer service, his personification, and his love for life live on through his grandson, who we know today as “Ricardo”.

Chef Josh Soult

Executive Chef

Born in Subic Bay Philippines and raised on the eastern seaboard of the United States, Chef Josh joins Ricardo’s after his most recent tenure with the Barking Frog at Willows Lodge. Josh learned the basics of line growth while working everywhere from Virginia Beach to Norfolk to Western New York and Tampa Bay.

Josh staged and worked with a number of critically acclaimed houses. Much like Ricardo, he also had his passion and inspiration for food implanted by his father and grandfather. “My family challenged me to try to replicate the fare from back home. We used to make certain foods around the campfire after long outings of hunting and boating that are now etched in my memory eternally”.

Josh loves transforming food he knows and seeks to ignite the playfulness of one’s palate. He credits his family for his absolute desire for perfection and is proud to bring his skill set to Ricardo’s.

General Manager

Brian Fischer is a native of Seattle and 20-year veteran in hospitality. Brian has worked in fine dining as a manager, bartender, server, and consultant. Brian worked 16 years for the Barking Frog at Willows Lodge in the heart of Woodinville wine country. Previously, he managed at 08′ Seafood Grill and Twisted Wine Cork. His career began with Altezzo in the South Puget South region. Brian is a true believer in relationship building. He contends it is the attention to detail, the human connection, and the desire to create special memories for each guest that will ultimately lay the foundation for an amazing culinary experience. Brian now resides in Yelm and is excited to be a part of the Ricardo’s family.
