About Us

Chef Ricardo, owner of Ricardo's Restaurant, was born and raised in Lacey, WA. His passion for food began while watching his Grandfather, Dave Wilson run his local pizza parlor. Yes, that is Dirty Dave's, as in home of the famous "Jake" sandwich. Rick started bussing tables as a young boy and continued to help out while going to school at Timberline. After his high school career, Rick worked a brief stint in construction, building waterfront docks. He then returned to the food industry working at the Olympia Farmers' Market with his aunt, Carol Mercurio, and later as a Sous Chef at Genoa's on the Bay. His last job before opening Ricardo's was working at Mama Stortinis Italian Restaurant in Tacoma. This was when he decided it was time for him to open his own place.

Rick partnered with his mom, Toni Wilson, and opened Ricardo's Restaurant in October of 2003. The restaurant quickly became a local success because of its quaint ambience and made from scratch dishes. In the beginning, Ricardo's was a simple pasta restaurant, which has progressed into one of the best Steak Houses in Lacey and the surrounding cities. Toni and Rick have done a wonderful job creating an ever, changing atmosphere and menu at Ricardo's.

Rick is married to Olympia native, Marie (Alkire) Nelsen, who can often be found at Ricardo's lending a helping hand, dining with friends, or just watering the plants. Rick and Marie's son, Royce Richard (named after his dad's favorite car the Rolls Royce!), was born in January of 2008. Royce is the love of the entire family and a staple of the restaurant. Some days he works along side their friendly staff meeting, greeting, and seating patrons. Other days he can be found taking a nap in the office. This is a family friendly place indeed.
